To make simple syrup for cocktails, weigh equal parts white sugar and water: 200 g of each makes a 1:1 syrup. Warm the water until steaming but not boiling. Remove it from the heat. Boiling is unnecessary for dissolving this amount of sugar and creates avoidable evaporation, changing the ratio.
For a no-stove method, use hot water from a kettle in a heat-safe container. Let actively boiling water settle briefly before measuring, then work carefully to avoid splashes.
Step 2: add the sugar by weight
With the water container still on the scale, tare again and add 200 g sugar. Stir until no crystals remain and the syrup looks clear.
Do not judge completion while a layer of sugar sits invisibly on the bottom. Tilt the container gently and look for crystals moving at the base. Continue stirring rather than returning the mixture to a hard boil.
White granulated sugar gives a neutral syrup that lets the base spirit and citrus lead. Caster sugar dissolves faster but has the same job. Powdered sugar may contain starch and can make syrup cloudy, so it is not the first choice.
Step 3: cool before bottling tightly
Let the syrup cool in a clean covered container. Transfer it to a clean bottle, close it, and label it with the ratio and date: “1:1 simple — 25 Aug 2026,” for example.
Do not seal a very hot liquid in an unsuitable bottle. Heat can deform plastic, crack cold glass, and create pressure. Use containers intended for the temperature and leave the final service bottle open only as long as necessary.
Refrigerate after cooling. Pour syrup rather than dipping used spoons into it, and wipe the cap when sticky. Make quantities that suit your actual cocktail pace.
How long does homemade simple syrup last?
There is no single reliable expiry date for every home batch. Sugar concentration, heating, container sanitation, refrigerator temperature, repeated opening, and added flavorings all affect stability. A richer syrup generally resists spoilage better than a standard one, but neither is shelf-stable by default.
Keep syrup refrigerated in a clean covered container and inspect it before use. Discard the entire batch if you see mold, bubbling, unexpected cloudiness, pressure, stringiness, or fermented or otherwise off aromas. Do not skim a spot and keep the remainder.
Date labels matter because memory is a poor food-storage system. If you seldom make cocktails, prepare 100 g sugar with 100 g water instead. The ratio stays 1:1, the starting batch weighs 200 g, and waste drops by half.
Rich simple syrup: 2:1 by weight
For rich syrup, combine 400 g sugar with 200 g warm water. The ratio is 400 ÷ 200 = 2, so it is exactly 2:1 sugar to water by mass. Stir patiently; the higher concentration takes longer to dissolve.
Rich syrup contributes more sugar and less water per measured ounce than standard 1:1 syrup. It also has a heavier texture. Do not replace 0.5 oz (15 ml) standard syrup with 0.5 oz rich syrup and expect the same drink.
When converting an existing recipe, begin with a smaller rich-syrup pour and taste. For a recipe calling for 0.5 oz (15 ml) of 1:1 syrup, try 0.25 to 0.375 oz (7.5 to 11.25 ml) rich syrup. That is a tasting range, not a mathematically exact sweetness conversion: dissolved-sugar concentration, ingredient density, and perceived balance make a simple volume swap misleading.
Rich syrup is useful when a drink needs sweetness without much additional water, or when a fuller texture suits the style. Standard syrup remains easier for beginners because changes are less concentrated.
Volume ratios work, but name them honestly
Many bar recipes use one cup sugar and one cup water. That is a 1:1 ratio by volume, not by mass. It produces a usable syrup, but it is not the same formula as 200 g sugar plus 200 g water because sugar is denser than its loose cup measure suggests.
Pick one method and record it. Problems begin when a recipe says “1:1” without stating whether that means weight or volume, then another bartender silently uses the other. Our house method uses weight because a scale makes it clear and reproducible.
If a published cocktail was developed with volume-ratio syrup, use that method for the first test. The purpose is to reproduce the intended drink before revising it.
Cold-process syrup
Sugar can dissolve in room-temperature water with vigorous shaking or stirring. Combine equal weights in a clean bottle with spare headroom, close securely, and shake in intervals until no crystals remain.
Cold processing avoids heat and works well for small batches. It takes longer and demands a bottle that can be gripped safely. Do not fill to the neck; the liquid needs room to move.
Heating is faster, not inherently more correct. For plain white syrup, the flavor difference is usually less important than accurate ratio, complete dissolution, and clean refrigerated storage.
Demerara, brown sugar, and honey are different syrups

Demerara syrup
Demerara or turbinado sugar adds caramel and light molasses notes that suit whiskey and aged rum. Make it at 1:1 by weight for an easy pour, or 2:1 for a richer syrup. Some coarse crystals need more stirring.

Brown sugar contributes a stronger molasses character and can dominate delicate gin or citrus drinks. Start with 1:1 by weight and test it in a single serving before scaling.
Honey syrup
Combine equal weights honey and warm water for a fluid 1:1 honey syrup. Honey is not granulated sugar with better branding; its aroma changes the drink. Mild honey preserves more of the base spirit, while robust honey becomes a leading ingredient.
Flavor without turning the bottle into a science project
For citrus syrup, add broad strips of zest—without much white pith—to warm finished syrup, steep briefly, taste, then strain. For herb syrup, remove the pan from heat before adding mint, rosemary, basil, or thyme. Taste frequently; herbs can move from fragrant to medicinal quickly.
Fresh fruit, herbs, spices, and peels change storage behavior. Make smaller flavored batches, refrigerate, label ingredients and date, and discard at the first spoilage sign. Do not assume a plain-syrup storage habit transfers to a fruit infusion.
Avoid adding non-food-grade essential oils or decorative botanicals of uncertain identity. “Natural” describes origin, not safe dosage.
Measure syrup in the drink
A jigger turns adjustment into information. Begin with the recipe's stated amount, then change in small increments:
- 0.125 oz = 3.75 ml
- 0.25 oz = 7.5 ml
- 0.5 oz = 15 ml
- 0.75 oz = 22.5 ml
- 1 oz = 30 ml
If a Daiquiri is too tart at 0.75 oz (22.5 ml) syrup, try 0.875 oz (26.25 ml), not an unmeasured splash. If an Old Fashioned is too sweet, reduce the syrup rather than burying it under more whiskey.
Keep a note of the spirit, citrus, syrup ratio, and result. A tiny recipe log turns “better last time” into something you can actually repeat.
Troubleshooting
Crystals remain: warm gently and stir until dissolved. Confirm the intended ratio was not exceeded.
Crystals form later: concentration increased through evaporation, or sugar collected around the cap. Warm the intact syrup gently, stir, and clean the closure. Discard it instead if spoilage signs are present.
Syrup is cloudy: undissolved crystals, powdered-sugar starch, flavoring solids, or spoilage may be responsible. If a plain syrup changes unexpectedly or smells off, discard it.
Cocktails are inconsistent: confirm whether the recipe expects syrup by weight or volume, use the same ratio each batch, and measure every pour.
